Fresh spinach salad with honey mustard

Ingredients
1 Julia’s Farms spaghetti jar
2 red apples, cored and thinly sliced
¾ cup chopped walnuts
¾ cup dried cranberries
1 crisp lettuce
2 cups spinach
2 cups lamb’s lettuce
1 cup chopped celery (optional)
For the dressing:
3 Tablespoons extra-virgin olive oil
½ teaspoon apple vinegar
3 Tablespoons honey
2 Tablespoons Dijon mustard
salt and pepper to taste
Instructions
For the dressing:
In a bowl, whisk together apple vinegar, honey and mustard until well blended and smooth. Season with salt and pepper. Slowly drizzle in the olive oil in a very thin, slow stream. Set aside until ready to serve and stir before serving.

For the salad:
Drain and rinse the spaghetti with plenty of water. Set aside.
Add spaghetti, spinach, hand-chopped crisp lettuce, lamb’s lettuce, apples, walnuts, dried cranberries, and celery to a large bowl. Drizzle with the dressing, and toss to combine.
